The pre-Christmas season was so hectic for me with packing and shipping Sisoo orders, and planning the Sisoo trunk show, decorating our apartment, and trying to take in all the New York holiday magic, that I didn’t get a chance to slow down and do some traditional holiday activities that I wanted to do…like bake and decorate cookies. I bought about 10 unqiue tree cookie cutters back in November, because I was so excited to create a winter cookie forest. I finally got to the project on Christmas night.1 1/2 cups powdered sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1/2 teaspoon almond extract
2 1/2 cups Gold Medal all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Mix powdered sugar, butter, vanilla, almond extract and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate at least 2 hours (I put in freezer for about 20 minutes). Heat oven to 375ºF. Line several cookie sheets with parchment paper. Divide dough into small batches and keep refrigerated. Use small batches at a time, and roll dough with rolling pin to 1/4 inch thick on lightly floured surface. Important! If dough is more than 1/4″ thick they will spread too much and lose their shape and turn out like blobs (trust me on this one!). Cut into desired shapes with cookie cutters. Use spatula to help you get them onto the cookie sheets. If dough is difficult to work with, put it back in the refrigerator–the colder the dough the better. Bake 7 to 8 minutes or until edges are light brown. Remove from cookie sheet to a wire rack until cool. Frost and decorate!
