Frozen Strawberry Margarita (And How to Get the Salt to Stick to the Rim)

My obsession with margaritas started about 10 years ago when my friend Rick first made them for me at the beach in the freshest way possible: freshly squeezed lime juice, simple syrup and tequila. I never knew a margarita could taste so crisp and refreshing. Up until that point I had only tried them loaded with artificial flavors, sugar, triple sec and margarita mix. They never agreed with me until I tasted them in their purest form. And now these margaritas are my IT drink. Give one to me any hour of the day. I’ve been exploring with that basic margarita foundation for awhile, mostly by adding different fruits to the base, and I’ve substituted the simple syrup with maple syrup. This frozen strawberry recipe is always the most popular with friends. Like Rick’s margs, the ingredients are simple and nothing extra is added.

How do they get the salt to stick to the rims of the margarita glasses in restaurants and bars?! Pro tip: Take a lime wedge and run it around the rim of the glass. Pour salt on a flat dish, and turn the glass upside down and roll the rim around in the salt. 1 10 oz bag of frozen strawberries

2 shots fresh lime juice

2 shots maple syrup

4 shots tequila

10 ice cubes (the more ice, the thicker it will be)

Salt

Lime wedges

Vitamix/high speed blender

Here’s the deal:

1) Prep your glasses with salt as mentioned above. (You really can’t do this once the margarita is poured!)

2) Put all ingredients in the blender. Let it run until all ice and frozen strawberries are completely smooth.

3) Pour in glasses. Serve with a lime wedge garnish. This makes about 3-4 drinks.
