Nothing I love more than fruit, vegetables and flowers. (OK and dogs too.) I try to eat a lot of fresh salads throughout the week, but lately they’ve been feeling a little mundane. I had this alphabet cookie cutter set from this cake/plant topper DIY project, and decided to make a basil watermelon goat cheese salad…a little more interesting. Balsamic (glaze would be best)
Large knife (to cut watermelon)
Chopping knife or scissors (to chop basil)Steps:
Cut the watermelon into 3/4″ slices. Decide what you want to spell out, and lay your letters out onto of each slice. Cut out the letters and place onto a plate. I love these cookie cutter letters because they are 3″ X 2″ X 1″ and each letter is a generous portion of watermelon. Top the watermelon letters with as much chopped basil and crumbled goat cheese as you like. Finally, drizzle with balsamic. Serve chilled.
