Hola! If you’re following along on instagram, you know I’ve been working on a 30 day diet clean up. Whole 30, paleo, I’m not really sure what to call it. But I’m eating lots of clean, simple ingredients–no bread, sugar, processed carbs, nothing processed with ingredients I can’t pronounce. Just real food, real ingredients. I finished my first week, which included lots of fresh fruit and veggies, and lots of lean protein. I’m feeling great, but this weekend woke up wanting to indulge in something sweet–so instead of jumping entirely off the clean eatin’ wagon, I came up with this simple peanut butter chocolate chip “clean” recipe. Does the trick! I actually like these better than “real cookies” because I don’t feel the sugar crash after eating a couple. (In fact they are so satisfying I had a few for breakfast this morning shhhhhh. Back to fruit smoothies and hard-boiled eggs on Monday). WHAT YOU NEED
- 3/4 cup natural peanut butter (I used the fresh ground from Whole Foods)
- 1/3 cup grade A maple syrup
- 1/3 cup coconut flour
- 1 egg
- chocolate chips (these chips have just 3 ingredients and are dairy, nut and soy free)
- 1/4 tsp baking soda
- 1 tsp vanilla extract
- pinch of sea salt
Makes about 12 cookies. (Ya might wanna double it!)
- Preheat oven to 350°.
- Add all ingredients to a large bow, except the coconut flour and chocolate chips.
- Whisk with a fork until mixed thoroughly.
- Mix in coconut flour, this will make batter more dough-like.
- Fold in the chocolate chips.
- Spoon 1-1.5″ balls onto a cookie sheet.
- Optional- sprinkle tops with a slightspri nkle of sea salt for optimum deliciousness.
- Bake for 10-12 minutes until the top edges are slightly golden brown.
- By taking them out when just the edges are golden brown, the center will remain chewy.
- Irresistible, and I will be so impressed if you can wait to let these cool before nibbling!
You could also use crunchy peanut butter, honey-roasted peanut butter (extra naughty!), cashew butter or almond butter. Endless deliciousness!
