I've been experimenting with gluten-free snack ideas lately since giving birth to my baby girl and being more careful about what I eat postpartum.
I'm more aware, thanks to breastfeeding, of how many times a day the food I consume includes gluten, dairy, soy, eggs, and peanut butter. (I have always been a peanutbutteraholic and probably always will be.)
I accidentally created this recipe this week after a big Trader Joe's haul and paired these three unexpected ingredients.

WHAT EXACTLY DO I NEED FOR THIS GLUTEN-FREE SNACK?
Here's what you need to make the gluten-free strawberry banana crisps:
- Trader Joe's Gluten-Free Norwegian Crispbreads
- Nut butter of your choice (I used Sun Butter)
- Trader Joe's freeze-dried strawberries and bananas
THE STAR INGREDIENT: Norwegian crispbreads
I found these crispy delightful flatbread crackers about a year ago at Trader's, and they've been making it into the basket ever since.
They are the ultimate snack! Not to mention, they are gluten-free.
These crispbreads not only hold you until your next meal, but they pack so nicely into a snack-sized ziplock when you're rushing out the door and need to eat something fast.
(They also pair so well with cheese.)
The ingredients of the crispbreads include:
SUNFLOWER SEEDS, OAT FLAKES, SESAME SEEDS, FLAX SEEDS, RICE BRAN, HONEY, POTATO FIBER, RAPESEED OIL, SALT, BEET SUGAR FIBER, WATER.
WHAT KIND OF NUT BUTTER SHOULD I USE?
Any nut butter will do!
- peanut butter
- almond butter
- cashew butter
- sun butter
- my new favorite: chocolate sun butter (it's even better than Nutella!)
Why NOT USE FRESH STRAWBERRIES AND BANANAS?
If you prefer to use fresh fruit, go for it! It will taste delicious.
But there's something about the freeze-dried berry/banana texture paired with the crunch of the crispbreads.
The double whammy of crunchiness of this snack is beyond satisfying.
It's also a great snack that doesn't require any ripened produce. When you are fresh out of bananas, these simple three ingredients will be waiting in your pantry!
Strawberry Banana Crisps
A healthy and glamorous upgrade from your typical PB&J.

Ingredients
- Trader Joe’s Gluten Free Norwegian Crispbreads
- Nut butter of your choice (I used Sun Butter)
- Trader Joe’s freeze dried strawberries and bananas
Instructions
Generously layer the crispbread with nut butter and top with freeze dried strawberries and bananas.
